Lebanese salad

as we were moving I ran across this recipe in a cookbook entitled The Healthy Kitchen by Andrew Weil and Rosie Daley  we prepared it to accompany dinner last night and it wa delicious I really could have eaten the whole thing!

Hubby had to try to make it fancy by decoratively placing some mint.

2 cucumbers,peeled and diced
4 Roma tomtaoes,diced
1 red onion,diced
1/4 cup freshly squeezed lemon juice
2 tablespoons extra virgin olive oil
1 clove of garlic(we used more we love garlic ) minced
3 tablespoons chopped fresh spearmint or 1 tablespoon dried mint leaves

1/4 cup  pitted ,sliced black olives(Kalamata or oil cured
1 cup cubed or crumbled feta cheese
salt and pepper to taste

toss all the ingredients together  ,chill before serving...Enjoy =)
